Rice paper springrolls with fresh vegetables
It's easy to make your own fresh springrolls with different kinds of vegetables or meat.
Ingrediens
You can choose what every vegetables you like. Here is an example of ingrediens:
- carrot
- cucumber
- spring onions
- salad
- cold chicken or beef
- sweet chili sauce
- peanuts crushed into bits
- rice paper
How to do
Sprinkle the ricepaper with a little bit of warm water until it gets soft. It's easy and better than to put the ricepaper completely into water.
When the ricepaper is soft start the filling.
Add salad pieces at the bottom and then thinly sliced vegetables of your choice. Then a few pieces of meat like chicken or beef, if you want.
Don't add too much filling because then the springroll can easily break when folding it.
Start by folding the ricepaper one time around the filling. Then fold the sides on top of the springroll, so the filling will not fall out of the springroll. Continue rolling the springroll until its cylinder shaped.
Before serving slice the spring roll into small 2 cm pieces, so they can be eaten in one bite.
Use sweet chili sauce for dipping. If the sauce is too sweet, you can add a little bit of warm water. Adding crushed peanuts to the sauce enchances the flavour and gives a nice taste.
